I love whipped cream - I use it inside my cakes, on top of my cakes, and I can eat it alone!
The only downfall of whipped cream? It's not as stable as buttercream or ganache, and can melt and separate easily.
To stabilize whipped cream and help make it sturdy and stable, simply add: LIGHT CORN SYRUP!

At the final stages of whisking your whipped cream, slowly add the corn syrup down the side of your bowl, continuing to whip until it reaches stiff peaks.
For every cup of heavy whipping cream you use, add 1 tbsp of corn syrup.
